St Davids Day Welsh Cakes

It is true, we are not Welsh but I am always up for any reason to get baking in the kitchen and as it is St Davids Day today I thought Livvy and I would throw on our aprons and get baking 🙂

The recipe below is beyond simple!  We all know how much I love quick and easy things and this fits the bill nicely (thanks mum for sending me the recipe!!!)

Welsh Cakes


350g Self raising flour
175g Butter
100g Sugar
75g Currants (or raisins)
2 Eggs
Cookie Cutters

How To Make

Welsh Cakes

  1. Rub the flour and butter together until it looks like little crumbs
  2. Next add the sugar and dried fruit and mix well
  3. Lastly add the eggs and combine to make a dough
  4. Turn the dough out and knead well
  5. On a floured surface roll the dough out until about 1/4″ thick and using cookie cutters cut shapes out
  6. Get a griddle or frying pan reasonably hot (you might want to rub a small amount of butter or oil into the pan/griddle)
  7. Cook the Welsh Cakes for around 10 minutes each – turning frequently to prevent burning
