Christmas Shortbread

So, Livvy and I had a challenge this week to find the most easy to make shortbread recipe, I am pleased to announce that we were triumphant!… As I am sure many of you lovely people will know, there quite a few different ways to make shortbread but this one uses only three ingredients that most of us will already have in our kitchen cupboards! At the bottom of the recipe there is a link that explains how shortbread originated!  Here is the winning recipe:

125g/4oz butter (softened)
55g/2oz caster sugar
180g/6oz plain flour

Pre-heat oven to 190ºC

  1. blend the softened butter and sugar until nice and smooth
  2. stir in the flour and mix until you have a nice smooth paste
  3. roll the dough-like mixture out on a clean work surface (you will need it to be about 1cm thick)
  4. cut into ‘fingers’ (or if you have an enthusiastic four year old use a cookie cutter to make teddy bear shapes!)
  5. sprinkle with icing sugar

place in the fridge for 20 mins,then transfer to the oven and bake for 15-20 mins until a nice light golden colour.

  1. Just for our follower Susy….easy to make, can be made up to a week in advance and kept in an air-tight container… perfect to impress the Swedes at Christmas 😉
