Oh So Simple Fairy Cakes

Below is the most simple recipe to make fairy cakes…. so simple in fact that even Livvy could do it with her eyes closed (well almost!)


125g unsalted butter
125g castor sugar
2 large eggs
125g self raising flour
1/2 teaspoon vanilla extract
2-3 tablespoon milk

Pre-heat oven to 200 °C (180 °C for fan assisted ovens)

If you are super lazy whack all ingredients (apart from the milk) into a blender blitz it up until it’s nice and smooth, then add the milk very slowly until combined.

Now fill your cupcake holders with your scrummy mixture.  We use the “I Can Cook” silicone cupcake holders which are reusable and easy to wash etc. 😉

Place in pre-heated oven for 15-20 mins…. read on for icing recipe…..

If you’re having a nice slow, lazy day then you can lavish more attention and make the fairy cakes by hand ( I have it on good authority that the fairies prefer it this way!!)……

  1. cream softened butter with sugar (end result should be super smooth)
  2. add vanilla extract (essence) and combine
  3. break one egg at a time into mixture and beat slowly
  4. add roughly a spoonful or so of flour at a time folding it gently until all the flour is used
  5. the mixture should be nice and smooth by now… when it is add 2-3 tablespoons of milk
  6. dollop mixture into cupcake holders
  7. place into preheated oven and cook for 15-20 mins

Whilst cakes are cooking nicely (and the fairies are waiting patiently) you can make the icing, for this you will need….


100g unsalted butter
100g icing sugar
food colouring

  1. cream butter with icing sugar
  2. add food colouring and blend

Once your little beauties are cooked, cut off the tops of the cakes to make a nice even surface.  Place a tablespoon or so of the icing (dependent on how thick you like your icing to be) onto the top of the cake, then take the piece that you cut off and divide it into two and place on top of the iced fairy cake…. voila beautiful delicious cakes that you can share with everyone ( including fairies )  🙂

  1. Thank you Flutterbys 🙂 I think even this “I can’t cook” granny will be testing out this recipe:) and with Christmas just around the corner can you & Livvy recommend a traditional English shortbread recipe that would impress my Swedish counterparts? Thanks xxx
