Wednesday’s are officially Livvy and Mummy days!…we get to choose to do whatever we want whether it be to go to our favorite garden center for a play and a coffee or a visit to the shopping mall (Liv loves having a good old fashioned wander around – especially if we swing past a toy shop or two!!)
Last night I asked Livvy what she wanted to do for “our day” together and she said she wanted to bake a cake and make an owl..so this post is all about the baking side of our day today and later the post will be all about the making of Livvy’s owl
The recipe below is our very own… for it we used a mixture of raspberries, blueberries and blackberries…you can add whatever berries you like
You Will Need
6 Tablespoons of unsalted butter (softened)
1 1/2 Cups of plain flour
1 1/2 Tablespoons baking powder
1/2 Teaspoon salt
1 Cup castor sugar
1 Large egg
1/2 Cup low fat milk
250g Berries
How We Made It
Pre-heat oven to 180ºC
- Cream butter and sugar together (either in a mixer or as we did by hand!) once it is pale and fluffy add the egg and milk
- In another bowl sift the flour, baking powder and salt
- Combine the butter mixture with the flour and fold gently
- Once completely mixed pour into a greased cake tin
- Arrange your delicious berries on top of the mixture and place in a pre-heated oven
- Cook for 10 minutes at 180 ºC then lower the temperature to 160 ºC and bake for a further 45 mins or until nice and golden on top
Enjoy with a nice cup of espresso coffee
